I assume you question is how to apply for a Thai birth certificate and Thai passport, right?
As I understand it from your single sentence (is it a sentence?) you’re married to the child’s mother, the child was born in NZ and did not register it’s birth with the Thai consulate, and the mother had to leave the country because she’s overstayed.
The only way to apply for you child a Thai birth certificate is to travel to Thailand with your child and get it done there. You need to prove that the mother is Thai, only NZ birth certificate cannot prove that.
You will have to go back to the "amphur" that you were born and have them check the records.
If you can still speak thai well, you will probably have to pay a small fee or bribe for the guy / lady to get off their butts and search for you.... also need some kind of official ID to prove your identity.
If you aren't able to speak thai any longer or have a non-thai accent, you still pobably have to pay the fee but maybe a little higher + bring official proof of identity and you "might need to bring some sort of local thai wiitness - relative who can also back up your claim.
oh, almost forgot, you will first need to stop by some local police dept. and file an official report of the loss of the birth certificate. A copy of this police report will be required to show the amphu.
